This is such an easy appetizer to make! It's creamy, it's heavy in protein, a bit spicy and then there is the saltiness of the ranch dressing seasoning that brings it together so well. Plus, it doesn't have an insane amount of cream cheese in it but just enough to bring it all together to make it creamy enough to scoop up with celery and it stays together enough to eat it with a cracker. I like it both ways :)
To be honest, I've been making this recipe for years, and I eat it alongside rice, vegetables, crackers, on bread...it's pretty versatile. It only dawned on me recently that it would be delicious with carrots and celery and functions amazingly as an appetizer. Plus we were having a few family members over to celebrate our daughter's third birthday, so it seemed like a great opportunity to put my crockpot to use and make this.
Plus, then I ate it the rest of the week for lunch ;). I am a scavenger, what can I say.
This recipe is super easy, uses 4 ingredients, and the crockpot. You can use either fresh or frozen chicken breasts, I've tried both and can't tell either way, and you can use the packets of Ranch Seasoning you find at the super market or if you can find a large canister of the Hidden Valley Ranch Seasoning, that works too. I have the Costco-sized version because I love the stuff so much!
