Need I say more? I have to laugh a little every time I cook with Creme Fraiche all thanks to Randy from South Park. If you know, you know ;)
In all seriousness though, Creme Fraiche is like sour cream and cream cheese's super classy cousin that everyone envies. It's sweeter than sour cream, but with a similar texture, but tastes more like cream cheese. It's delightful in mashed potatoes and fairly easy to find these days. I grabbed a small container from Trader Joe's to make these but have seen them at Target as well as Caputo's and I'm sure can be found elsewhere.
These potatoes are super light and fluffy and taste similar to a steakhouse garlic mashed potato side but don't actually have all the butter like a steakhouse would do. They're a delightful side to any meat and I'm really excited to pair these with a side of short ribs now that the winter is starting to drop. Or meatloaf. Or roasted chicken... You get the idea :)
