Is there anything better than only dirtying up 1 pan and having dinner or lunches for multiple days? OK, I can probably think of a lot of other things that are better than cooking a dinner, but, you get my point. If you're going to cook dinner on a busy weeknight, only making a mess of one pan is a win in my book.
I found both the Weber Kick'n Chicken® seasoning and Urban Accents Veggie Roaster® seasoning at Costco and they are great combos and go well on so many different vegetables and poultry/turkey dishes. Not to mention, the Kick'n Chicken® seasoning is really delicious on vegetables too if you like a touch of heat.
Having pre-mixed spices like this is such a great way to throw together a quick meal or lunches for the week when meal prepping or a busy weeknight. Costco always has delicious ones I can buy in bulk but I can usually find good ones at Target as well as Jewel.
If you're counting macros, calories or following any diet of sorts, this is also a great option for you. Plus this reheats well all week :)
I usually roast my veggies at 400° until tender-crisp. This allows them to reheat well without getting soggy. Green Beans can roast up pretty quickly, so I used chicken cutlets, which basically are just chicken breasts cut into thin strips. Chicken Tenderloins would also be a good option for these. If you use chicken breasts, just ensure to cut at least into half or plan on removing the green beans when they're finished and letting your chicken cook up to 165°.
I have a 4, 2 and 1 year old I'm taking care of while putting this dinner, so the less times I can open the oven or dirty up dishes is my goal. I wish I was joking haha.
The assembly is very easy! Get your oven preheated and then trim up and wash the green beans. Next I laid down parchment paper onto a cookie sheet while my green beans drained. You can always use pre-trimmed green beans but this happened to be what I had picked up for the week. Dump your green beans on one side, your chicken cutlets or tenderloins on the other side. Spray both with some olive oil. I used the Urban Accents® Veggie Roaster on the green beans and the Weber Kick'n Chicken®.
Flip your chicken over and be sure to season the other side well. For your green beans, give them a quick stir, add a bit more seasoning, and into the oven they go.
*This is a great recipe to double or triple depending on how many you're feeding and especially if you have multiple folks in the house meal prepping lunches for the week :)
Cook for about 20-25 minutes, until your green beans start to get a tad tender and your chicken is cooked to 165°. These go especially well with my Cauliflower Mash!
