This may one my favorite dressings I've ever whipped up. I've been on a bit of a Feta kick, and this did not disappoint. It has just enough Feta to taste it, and add creaminess to the greek yogurt which can otherwise be a tad bitter, then the basil creates this herby little pop with the tang of the lemon and it was just so yummy. I ate it on chicken, I ate it with carrots, I ate it on my salads. It worked with it all.
It's super easy to whip up too. Just toss it all into the blender and keep blending and pushing the concoction down until it's smooth and creamy. Plus how much fun is this color?
Like a little pop of spring during a very volatile March and April!
