A make-your-own-burrito with an extra helping to ensure no one leaves the breakfast table still hungry!
Using chicken sausage, corn, onions and cherry tomatoes, these burrito bowls have some serious punch. I charred up a few tortillas so my husband could make his own burrito and still have some leftover burrito mix to pick at after he devoured the first one. They're hearty, savory, and a heavy dose of vegetables leaves everyone full! Not to mention they make a lot, so you can have leftovers that heat super well and they only take a few minutes to put together.
Anyone that does a "leg day" at the gym probably knows what I'm talking about. You come home famished and a few eggs is just not going to cut it. Add in some vegetables, no-sugar chicken sausage and a tortilla and now we're talking. My husband had a leg day that day, I knew what was up. He was going to come home, HUNGRY. Hence the hungry man title ;)
I used whole wheat for these, but the second day I ate just the mixture with an egg over easy and it was still delicious!
Unfortunately our fridge broke this week and we just got back from 5 days in Tennessee, so I've been running pretty lean in the grocery department, so I kept it quite simple. I had to get a little creative too and used mozzarella cheese instead of my standard cheddar jack in my toppings. I figured they wouldn't notice. Happy to report, they didn't.
How to make my Hungry Man Burritos:
I got started by adding some coconut oil to a hot pan, but any oil would do, and sautéing a chopped onion with a bit of garlic. Once that's cooked for a few minutes, I added in halved cherry tomatoes, a cup of canned corn (charred corn would be delicious but I was in a bit of a hurry), 2 links of chicken and apple sausage from Aidell's plus my taco seasonings. It's really that easy.
Meanwhile, I scrambled up some eggs and got to work charring a few tortillas. This part is so easy and it really does make a difference on the flavor. In the event you haven't done it this way before, you literally put your tortilla on an open flame on your stove, wait for it to begin to bubble, then flip. Wait for it to do the same on the other side, and you're done! Takes about a minute and makes them very pliable which is always necessary for burritos.
To assemble these, I layered scrambled eggs and on top added the corn and sausage mixture. Next came the toppings. Hot sauce, fresh cilantro from the garden, cheese and avocado. Served with a side of charred tortillas. Delicious!
