Meal Prep Crockpot Rotisserie Chicken

3 ingredients total. Makes a few pounds of shredded chicken. The possibilities are endless.


This is such an easy recipe and it allows me to have easy-to-grab proteins through the week for salads, soups, tacos, enchiladas, you name it. It's lightly seasoned so if you decide to take it the enchilada route, for example, adding your enchilada seasonings to your shredded chicken is super easy.


It's also great in soups and wraps. I've been enjoying it this week with Joseph's Lavash Bread, some lettuce and some kind of sauce. Very versatile! You can do this method with boneless chicken thighs if you prefer, but I like to use chicken breasts for this.
