So I have zero clue what TikTok is. I guess I could download it and explore, but I also have 3 little kids and quite a bit going on lately, so I'll just watch for the trends via Instagram which I find much more interesting to view. I was very intrigued though when I heard about the roasted Feta pasta. Feta is delicious, but also, roasting it with tomatoes and herbs sounds amazing.
In all laziness, I also wanted to see how I could cook the pasta in the same dish as the feta so I didn't have to dirty up more dishes. Turns out the pasta was amazing, the feta was outstanding and it really only did take 10 minutes total to make and cooked for 60 total. I had a one pan, TikTok Feta Sensation on my hand. Or whatever you want to call it ;)
This turned out to be a really easy and fun way to cook pasta in one pan. I added in chicken so it's a "complete" meal for our family as well as the addition of a few extra ingredients to spice it up a bit. Just cheese and pasta, as delicious as that is, isn't going to cut it for me. I'm always trying to sneak in extra veggies.
I started with a few basics. Feta, tomatoes, red onions and red peppers. Those always go together in my opinion.
Next, I got my pan ready for my feta. I used a 9x13 baking dish for this and simply placed the Feta cheese in the middle and drizzled with olive oil. Next I dumped my drained diced tomatoes (or feel free to use fresh cherry tomatoes) all around the Feta, added my red peppers and onions and sprinkled heavily with my fresh herbs. Lastly, I sprinkled a bit of flakey sea salt and cracked black pepper over the dish. Into the oven it went for 40 minutes.
After it cooked, I added in my orzo, water, greek seasoning and cooked chicken and covered with aluminum foil. I cooked it again for 20 more minutes until my pasta was al dente. It turned out delicious!!
