Parmesan Herb Roasted Radishes

I've bee on a terror lately trying out new side dishes. I've been growing tired of the same old thing, and life has been so busy that a lot of times I'm trying to put together a casserole of some sort to ensure everyone has dinner before I leave for physical therapy in the evenings. I've been dealing with a foot problem for the past year and am finally getting closer to some answers, but unfortunately, it means doctors appointments, physical therapy...etc. It can be a lot especially when you're running a household with three kiddos who are busy with their own activities, preschool and a hubby who has been working a lot. I can't wait for grilling season to commence (it's this weekend, by the way, and I have some massive steaks ready to kick it off)! So in the meantime, I've been trying to stockpile sides in the fridge so that as I'm running out the door, a healthy meal is easily accessible for me to put together for everyone before I head out.


I've grown radishes for years and to be honest, I do not like them raw. I figured why not roast them? Roasting things always makes even the yuckiest of vegetables delicious. And this works. The addition of the parmesan, the fresh herbs and the flakey sea salt literally make them taste like a low carb french fry. Crispy on the outside, tender on the inside, salty, herby and they had so much flavor. They were so good I even ate them with eggs earlier this week. I highly recommend!!



 

I've talked about this before, but we have a gigantic garden in the back that we grow fresh herbs, fruits, vegetables, you name it. We love it and it's been such a labor of love for our family. Quite literally. My husband built it for me for my first Mother's Day when I was 40+ weeks pregnant. It was such a fun thing to do while we adjusted to life at home with a newborn that summer and turns out, we have great soil for it. Not sure I can say I have a green thumb yet, but I do get some decent yields from our garden.


One of the things we always grow are radishes. I like that I get something early in spring but I've never actually liked radishes. I usually give them away ha! I think this year I may hoard them for us so I can make these again. Since the garden isn't operational yet, I grabbed a bag of radishes from Caputo's this week wanting to try roasting them up. They're inexpensive, low carb and turns out, delicious when roasted.




I cut them up, added salt, pepper and oil to them and gave them a good toss in a bowl. I quartered these as I wasn't positive how long they would take to roast and get a good crisp since radishes are quite dense. 40 minutes worked for these, but if you only halve them, plan to increase the cooking time.


After I mixed them up, I chopped up some fresh herbs I had in the fridge. Thyme and Rosemary always go great together, as does garlic and parmesan. The mix alone smelled so good!! I sprinkled my herbs and parmesan into the bowl, mixed more and got them onto my cooking sheet.


Another quick mix and they were ready to roast. 40 minutes in a 400° oven and you have yourselves a delicious little side dish. Enjoy!
