Sometimes I throw up a yummy little recipe on Instagram and don't actually create a recipe card for it. Or if I do, it's much later, as in this instance!
I made a Summer Shrimp Scampi using all the classic flavors of a scampi (lemon, garlic, butter) but added in some delicious tomatoes and mushrooms to help use up some of that summer produce AND, get some fiber into the dish. For all those looking, here is the recipe card for the associated dish. It was a WINNER! My 5 year old asked if I could make it every night and it made my heart happy :)
