Sweet Honey Sriracha Salmon

Butter. Sriracha. Honey. Salmon... So good! I don't make salmon too frequently, but when I do, I either go very simplistic with just butter, lemon and salt and pepper, or, I try to have some type of asian flavors with it. Both ways are my favorite.


This salmon is fresh, sweet and a touchy spicy from the Sirracha. The soy sauce and butter gives it this rich flavor and plus, the recipe makes two pounds. I've now eaten it for dinner and lunch a few times and I'm still thoroughly enjoying it!




 

Anyone else a little particular about their salmon? I don't really care for farm raised, and I don't like the frozen filets, so whenever Costco has fresh, wild salmon available we always purchase some. While sometimes I portion it out and freeze it, we usually cook it up right away. For some reason I've found that buying frozen salmon in the freezer section of the store, it always tastes extra fishy. Well yes, it's a fish, but I don't tend to like fishy fish. I realize that is quite a statement ;)


Anyway, so back to why you should make this. Honey, sriracha, limes and soy sauce are such an amazing combination. The salmon doesn't end up too sweet and the sriracha isn't too spicy. The butter keeps the meat moist, which wild salmon actually has much less fat content than farm raised, so the meat is more likely to dry out. It cooks so quickly too making it a perfect weeknight dinner option.




Using de-thawed or fresh salmon, rinse and pat dry. Add your salmon to a greased 9x13 glass dish and preheat your oven to 400°. Liberally season your salmon with salt and pepper.


Next work to create your sriracha butter with fresh dill. I took my room-temperature butter and just mixed it up with the sriracha, dill and some flakey sea salt and pepper. Easy! The dill gives it such a great pop of fresh flavor and the sriracha adds a nice touch of spice.





Lastly, I mixed up a sauce for the salmon to cook in. This would also be a great marinade if you have time to let the salmon sit and soak up the flavors in the fridge, but since it was a busy Wednesday night for me, I opted to just let the salmon cook in the sauce and I'm really happy I did!


I quickly mixed up some garlic, the juice of 1 fresh lime, honey and soy sauce. I poured it onto my salmon, add some of the sriracha butter to each filet and cooked it up.



Dinner done in less than 30 minutes :)
